Celiac Disease
Celiac Disease is centered in the small intestine and causes problems in the absorbing of nutrients which mostly
takes place there. The absorption takes place at finger like protrusions called intestinal Villi. They increase the
surface area for absorption and have anatomical parts to facilitate this action.

Grains such as wheat, barley, and rye contain gluten which many people can not tolerate. The body things the
gluten is a poison and attacks and in the process destroys some of the intestinal Villi.
Without these in good working condition we can not absorb nutrients. Gluten is present in so many common foods
and medicines, it takes vigilance to identify foods we can eat.
Some people think that since wheat, rye, and barley are more recently develops domesticated crops that our body
